Our Story
Welcome To
Paris In My Kitchen
We are just setting out in creating this new series of digital cookbooks full of photos and easy-to-follow steps. A collaboration between husband and wife, we’re starting with sourdough bread and soon will get on to delicious French pastries and treats before diving into the many different cheeses Patrick makes here in our home kitchen in Canada.
Originally from Paris, France, Patrick worked at the high-end bakeries of a few friends while growing up in Paris. Not being able to easily find some of these wonderful treats and cheeses once he moved to Canada, and if we did, they were quite expensive, he decided to start making them at home. Myself, I’ve been baking sweets and bread since the early 1980s, with sourdough being one of my favourites.

This light and airy Choux pastry is so versatile. As Chouquettes, with their pearl sugar on top, they are hard to resist. With the right knowledge and understanding on how and why they inflate, and added tips and tricks we can offer you, this will help ensure successfully shaped balls.

Gougère
Another treat made from pâte à choux, this time a savory one with an irresistible richness of butter and cheese, typically Gruyère, Comté or Emmental is said to have originated in Auxerre, the Burgundy region of France. It is a wonderfully light hors d’œuvre sure to compliment any meal.

Caramel salé
Basic ingredients, so delicious. Caramels topped with salt are such a perfect combination of flavours. I love the sweet and and the bite of salt., all wrapped up into one little tasty treat.

Croissant
Who can resist fresh croissants? Flaky and light, so many layers. Do you peel them apart one by one? Or do you dip them in your coffee, soaking it up à la Française? Learn how to make this wonderfully popular, but somewhat tricky treat.

Tarte Tatin
Tarte Tatin, named after the French hotel serving it as its signature dish, is a pastry in which the apples are baked upside-down in caramel made from butter and sugar. It can be done with a variety of crusts, but our favourite is a feuilletée.

Tarte aux pommes
Tarte aux pommes is another French classic and there are many, many variants. We love it with a pâte sucré accented with a hint of lime zest, topped with apples nestled on a compôte de pommes, and finished with an apricot glaze.

Crèpe
Savory or sweet, this is a simple and versatile French classic that anyone can make. Stuffed with chicken or asparagus in a cream sauce, it is sure to impress. For dessert, fill with fruit and Chantilly cream or simply splash with lemon and sprinkle with sugar, they’re sure to want more.

Brioche
So light and puffy, and rich with eggs, milk and butter, this special French bread is a treat to eat. It is considered a viennoiserie, putting it in the category as croissant and danish. It has a very tender and slightly sweet crumb and is wonderful to eat simply on its own.
